Fairmont Empress debuts Sunset Sips, a new evening cocktail and culinary experience that offers a twist on tradition, on Thursday, May 25.
Building upon their reputation for serving famed royalty, celebrities and dignataries, Sunset Sips boasts to offer a new elevated nightlife option for the city of Victoria.
The Lobby Lounge, where the daytime tea service is held, will be transformed into a Prohibition-style atmosphere as the sun sets. Music of the 1920s will be playing while guests can enjoy a robust cocktail menu served in China teapots.
The menu includes playful drinks such as the Mad Hatter, featuring fresh dill infused tequila, Cointreau, raspberry lemonade tea syrup and lime and pineapple; or the Lady Whistledown, inspired by the popular Netflix series and containing a blend of gin, chamomile tea syrup, garnished with a rolled cucumber and served with a side carafe of prosecco.
The Sunset Sips culinary menu, available for $45 per person, features tapas-style items like a white-cheddar and chive biscuit, grilled avocado and heirloom tomato tartine, and roast beef stuffed Yorkshire pudding. All items are served on a classic three-tiered tea stand, paying homage to the traditional afternoon tea menu.
Sunset Sips runs Thursday through Sundays from 8 p.m. until 11 p.m. Reservations are recommended and are available by booking online. For more information, visit fairmont-empress.com.
